Sourcing

We source from family olive groves in Andalusia and small herb farms in Provence and the Peloponnese. Cold-pressing happens within 24 hours of picking; resinous herbs are steam-distilled at the farm to capture volatile aromatics that would dissipate in transit.

Heritage

The Mediterranean basin is where Western herbalism was first written down, Dioscorides' De Materia Medica catalogued these plants in the 1st century. Two thousand years later, the same hillsides still produce the same oils, by largely the same methods.

Journey

From grove to glass: olives picked at first ripeness, pressed before sundown, decanted into amber. Herbs hung to dry in stone barns before distillation. A short truck ride to the bottling line, and most of our Mediterranean ingredients move fewer miles than supermarket produce.
